What to Cook This Week

Hi friends! We've all had colds over here (and we've been having oddly cool weather as well!) so Chicken Noodle Soup is definitely on the menu! I love making these little Avocado and/or Ricotta Toasts for lunch, or as a pre-dinner appetizer.

Another lunch favorite is my Kale Detox Salad with Avocado (and carrots, cabbage, and quinoa). It all keeps well in the fridge so I can easily mix it up with some lemon vinaigrette, and maybe some roast chicken, for a quick, healthy lunch. My kids love stir-fry and I love this quick Stir Fry with Black Rice, Shiitake Mushrooms, Carrots, and Spinach.

Finally, for something sweet, Raspberry-Oatmeal Bars are a family favorite - feel free to swap out the raspberries for strawberries or any other berry.
