Happy New Year, friends! I'm a bit late in posting because my kids were home from school for nearly a MONTH and honestly, it's very hard to get much done outside my normal mom duties with them around! (Can anyone relate?!)
For the beginning of January, I alternate between craving healthy, light dishes like this easy Kale Detox Salad with Avocado and my Baby Kale Smoothie with Cucumber and Pear, and warm, comforting meals like Homemade Chicken Noodle Soup with Spinach (perfect when you have a cold) and the wonderfully flavorful Lamb Tagine with Apricots, Figs, and Chickpeas served over couscous. And for an easy, healthy weeknight meal, you'll love this Garlicky Shrimp with White Wine and Tomatoes. Serve it with plenty of fresh bread to soak up the sauce, and a simple green salad. Enjoy!
