What to Cook This Week

It's January. It's cold and gray outside. And I just want to eat simple, cozy dishes like this Potato Leek Soup (definitely add some crumbled crisp bacon on top!) that I can reheat for lunch the next day. Another favorite is this flavorful Lamb Tagine with Dried Apricots and Figs. It's perfect for a dinner party because it can be made completely in advance! I like to serve it with this refreshing citrus salad with arugula and pistachios - it's as pretty as it is delicious.

Finally, on nights you really don't want to cook, here's a 20 minute, healthy meal that even your kids will like: Apricot-Dijon Chicken Thighs with Couscous and Roasted Broccoli. Enjoy!
