  • 2 pounds broccoli, cut into bite-size florets (reserve stems for soup)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

DIRECTIONS SHOW STEP-BY-STEP

Preheat oven to 425 degrees F. Cover a baking sheet with aluminum foil.

Toss the broccoli florets with olive oil and season with salt and pepper to taste. Roast for 20 minutes or until tender, and slightly charred.
