Happy Thanksgiving, friends! Given everyone is planning for the big meal on Thursday, I wanted to give you a variety of recipes ideas to choose from - both for T-day itself, and the rest of the week. Pumpkin Spice Pancakes are a classic fall breakfast favorite in my house - especially this week. I included two healthy, easy Thanksgiving Day sides (Quinoa Salad with Brussels Sprout & Delicata Squash, plus Dijon-Shallot Haricots Verts) to balance out all the casseroles, an easy weeknight dinner (Lamb Sliders with Tzatziki Sauce), and my favorite Three Bean Turkey Chili to make with all of your turkey leftovers.
