What to Cook This Week

Hi friends! Warm weather and spring produce have me excited to cook again, and I'm especially loving eating outdoors!

I had a dinner party last night and made this super easy Honey-Dijon Salmon with Lemon and Thyme – it takes literally 5 minutes to assemble, and then cooks for about 15 minutes. It's the best easy main dish for a dinner party, and it's always a crowd-pleaser. I served it with a version of this Farro Salad with Watermelon Radishes with Snap Peas, Mint, and Feta. (I made mine with quinoa and regular radishes, and left off the arugula - this salad is so versatile!)

I'm craving these Crostini with Ricotta and Pea-Mint Pesto – the perfect spring dinner party appetizer – and Spring Pea Risotto with Lemon and Pecorino. (If you can find fresh peas, I highly recommend using them, though frozen will work.) Finally, I'm making these Strawberry-Rhubarb Crumble, while strawberry and rhubarb are in season! Enjoy!
