What to Cook This Week

Week of February 6, 2022

Happy February, friends! I'm not gonna lie - I'm glad we are through with January. We have two birthdays in our family in February (Grayson and Brandon), plus Valentine's Day, so it's fun to have several celebrations to brighten up the month.

I've got a few really easy, healthy (and delicious!) recipes for you this week. This Spicy Black Bean Soup (which actually isn't that spicy - the spice comes from cumin and coriander, not any sort of hot pepper) is on regular rotation at our house, and I love serving it with avocado and cheese quesadillas.

Another meal that I absolutely love is Honey-Dijon Salmon with Quinoa Salad with Butternut Squash and Spinach. You can make the quinoa salad completely in advance, and the leftovers make a perfect healthy grab-and-go lunch. I often serve this salmon with easy Roasted Broccoli. We make this broccoli at least once a week - it's so deliciously salty and crispy that my kids love it too!

Finally, I included a breakfast treat - Gluten-Free Baked Oatmeal. You can make it in ramekins OR feel free to bake it in an 8x8 square baking dish if you like. It's a nice make-ahead breakfast option: assemble the night before, refrigerate, and bake when you wake up. Enjoy!
