What to Cook This Week

Week of February 27, 2022

Hi friends. It's been a heavy week, both globally and personally. When I feel overwhelmed emotionally, my cooking gets WAY simpler. Which is why I created a menu this week of recipes that all take under 30 minutes to make, and use a lot of ingredients you probably already have on hand. They also hint at the spring to come, which I think we are all longing for right now!

Apricot-Dijon Chicken Thighs with Couscous are a go-to recipe when I need something quick and healthy to throw together for dinner. Make some Roasted Broccoli or Broccoli Rabe with Golden Raisins and Pine Nuts as side dish.

I love this Pea and Pancetta Pasta (and so do my kids!). It takes 20 minutes or so to make, and the peas and mint brighten up the classic carbonara sauce (eggs, bacon, Parmesan). Feel free to use whatever pasta you have/like. Sautéed Baby Kale with Over-Easy Eggs makes for a quick, healthy breakfast, lunch, or dinner.

Finally, this Gluten-Free Almond Cake with Lavender Honey is fantastic even if you're not gluten-sensitive. Feel free to substitute any type of raw honey if you can't find lavender honey, and serve with fresh berries and a dollop of Greek yogurt or whipped cream. Enjoy!
