What to Cook This Week

Week of January 16, 2022

Hi friends! Here we are, mid-January. The temps here in Nashville are dipping into the teens this week and I am making as many warm soups, stews, and cozy meals as possible. I love this flavorful White Bean Chicken Chili - it's easy to make and the leftovers are just as good (maybe even better!). I like to serve it with avocado slices, shredded cheese, and blue tortilla chips.

These Lamb Sliders are the perfect size for kids, and I love serving them with creamy Tzatziki sauce and Rosemary Roasted Sweet Potato fries. If you can't find ground lamb (or don't like it), feel free to swap out beef. I love a good kale salad and this wintry blend of Black Russian Kale, Radicchio, and Shaved Carrot with Lemon Vinaigrette and Parmesan is as pretty as it is delicious. Serve it on its own, or with toasted nuts, roast salmon, or shredded rotisserie chicken for some extra protein. And finally, this Brussels Sprouts Pizza - featuring naan bread as a base - is one of my all time favorites. Feel free to swap out mozzarella for the fontina if that's easier. Enjoy!
