What to Cook This Week

Happy December, friends!

For this week's menu, I'm throwing in some of my favorite hearty wintry comfort foods, like a hearty Sausage Ragu over Creamy Parmesan Polenta. This would be delicious served with the Winter Kale Salad on the side. I absolutely love these Whole Wheat Chicken Pot Pies - packed with veggies and roasted chicken, this makes the perfect cozy dinner on a cold night. (Feel free to swap out pre-made pie dough if you don't have time to make your own.)

This Spicy Black Bean Soup takes less than 30 minutes to make, and is a satisfying vegetarian meal. I love serving it with chunks of avocado on top, and cheese quesadillas on the side.

Finally, given it's the season for holiday baking, I thought you'd love these Cranberry-Pistachio biscotti. They look so festive, and they make wonderful little gifts for neighbors or friends. Enjoy!
