What to Cook This Week

Hi friends! For this week's menu, I have simple fall comfort food dishes that are both hearty and healthy. This weekend, make a big pot of Tuscan White Bean Soup and double the recipe: you'll get a meal this weekend and another meal (or several lunches) next week. It also freezes well, so making extra is always a good idea.

I love how easy Apricot Dijon Chicken Thighs are to make: simply whisk together grainy Dijon mustard and apricot jam, toss in some chicken thighs, and roast them in the oven. Serve with couscous and roasted broccoli, and dinner will be ready in less than 30 minutes! Another favorite fall weeknight meal are these Easy Naan Pizzas with Brussels Sprouts & Bacon (I use frozen naan bread). I love making them with fontina cheese, but you could easily use mozzarella.

Seared Pork Chops with Caramelized Apples and Onions is a perfect cozy fall supper that comes together quickly. Serve with mashed potatoes and a simple green salad.And for a sweet treat, I'm sharing a recipe for Old Fashioned Gingerbread Bundt Cake with Lemon Curd. I love this for dessert, an afternoon snack with a cup of tea, or toasted for breakfast. Enjoy!
