What to Cook This Week

Week of November 7, 2021

Friends! I am loving the fact that it's finally feeling like fall here! The leaves are glorious, the weather is crisp (official sweater weather!) and it makes me want to cook cook more than ever.

In honor of the cooler weather, this week I'm making Roasted Tomato Basil Soup with Grilled Cheese Sandwiches - does it get any cozier? To mix things up a bit flavor-wise, I included a delicious Korean-Style Grilled Flank Steak on the menu, with Spicy Cucumbers and Sticky Rice. (For kids who don't like spicy, just serve some raw cucumber slices on the side.)

For another simple & healthy meal combo, I love making this Honey-Dijon Glazed Salmon (you can use wild or farmed FYI) with sautéed Broccoli Rabe + Golden Raisins and Pine Nuts. This meal is easy enough to make on a weeknight (I'd add in some couscous to round it out) or elegant enough for a dinner party. Enjoy!
